Are there times you don't trust God to know who He ought to bring to Christ or that He might overlook certain people because you didn't pray?

No, but if that should be our mentality then why pray to ask Him for anything at all? As I’ve already shown, Paul obviously thought it was beneficial to pray for someone’s salvation.

I wouldn’t say cause but He may not grant things we desire if we don’t ask.

no because God grants us blessings that we haven’t even asked for.
Then why do you ask for anything in prayer? He’s going to give you good things anyway.
