God said, "Let there be light." But the sun and stars etc were not made until later. Jesus said he is the light of the world. When God said, "Let there be light,' was that the beginning of Jesus?

Since Yeshua is HaShem and HaShem has no beginning and no end, then no, it was not the beginning of Yeshua....
but to address the existance of light without the Sun and stars....
in Revelations it says that in the new heaven and new earth there will be no sun/moon as there will be no need for their light.... because of G-d's presence!! Hallelujah!!
Rev 21
22 I saw no Temple in the city, for ADONAI, God of heaven's armies, is its Temple, as is the Lamb. 23 The city has no need for the sun or the moon to shine on it, because God's Sh'khinah gives it light, and its lamp is the Lamb. 24 The nations will walk by its light, and the kings of the earth will bring their splendor into it.
Rev 22
5 Night will no longer exist, so they will need neither the light of a lamp nor the light of the sun, because AD-NAI, G-d, will shine upon them. And they will reign as kings forever and ever.
some people say thats is a good argument for a literal seven day creation because once he created the earth ready to produce, he only had about 24 hours to wait to make the sun and start photosynthesis.... have you ever gone to the creation institute? they have some awesome scientific studies for us....
