The order of creation was very specific so that we would know that it was impossible. Plant life came before the creation of the sun specifically to confuse you. We don't know the composition of "light." I suspect it was the origin of the "big bang" which happened on day four when the entirety of the universe with the exception of the sun was formed.It had to have the sun there and it had to settle down in that orbit for there to be plant life. so plant life 3rd day is just wrong. Every thing would get destroyed if the stars and sun and moon showed up on day 4
As for other galaxies which cannot be used for signs and seasons because of our limited ability to see them, nothing in the Scriptures ever specifically explains their origin. There could be millions of versions of humanity. We only know of ours.
