I thought we could start a thread where we can share our favorite recipes.

I'll start with 3 different Kugels:
Title: Potato Kugel
Categories:
Yield: 4 Servings

12 oz Potatoes; peeled
2 Eggs; separated
1 sm Onion; grated
2 tb Flour
1 tb Vegetable oil
-=PLUS=-
1 ts Vegetable oil
1 ts Salt
1/4 ts Pepper
1 ts Baking powder

Preheat oven to 375°.

Grate the potatoes. Drain well.

Combine in a bowl with egg yolks, onion, flour,
oil, salt, pepper, and baking powder. Mix well.

Beat egg whites until stiff. Fold into potato
mixture, gently, but thoroughly.

Spoon the mixture into a 1 1/2 qt baking dish that
has been sprayed with a nonstick cooking spray.

Bake, uncovered, 1 hour, until set and lightly
browned.
Apple-Onion Noodle Kugel 4 tablespoons canola or vegetable oil
2 medium onion, chopped
2 medium Golden Delicious apples, cored and diced
1 cup golden raisins
5 eggs
1/3 cup sugar
¼ teaspoon cinnamon
½ teaspoon salt
½ teaspoon freshly ground pepper
12 ounces medium egg noodles, cooked and drained

Preheat oven to 350 degrees F. Grease a 9 x 13 inch baking pan. In a medium skillet, heat oil. Cook onions and apples until slightly softened over medium heat, about 4 minutes. Stir in raisins and cook another 30 seconds. Let mixture cool slightly. In a large bowl beat eggs with sugar, cinnamon, salt and pepper. Stir in apple mixture and noodles until well combined. Pour into baking pan. Bake about 1 hour or until golden brown on top. Serve warm or room temperature cut into squares. Serves 12.

and my favorite: the classic cinnamon Raisin Kugel:
Ingredients:

ounces of medium noodles
¼
pound (1 stick) of melted butter

eggs

pint (16 ounces) cottage cheese
1
pint (16 ounces) sour cream
1
cup of raisins
¾
cup of sugar

teaspoons of cinnamon
¼
teaspoon nutmegDirections: Cook noodles according to package instructions; rinse; drain.

Mix the noodles and melted butter together in a large bowl.

One at a time, mix and add: eggs, cottage cheese, sour cream, and raisins.

Place in a greased 9" x 13" pan.

Combine sugar, cinnamon, and nutmeg. Sprinkle over the kugel.

Bake at 350° (325° if using Pyrex) for 1 hour.

Notes: Prep time: 2 hours

You'll need

Smoked salmon
Nori sushi sheets
Green beans simmered till soft
Carrots, julienned and softened
cucumbers julienned
pickeled ginger
radishes sliced thin
4-5 cups of rice
Cilantro leaves
Wasabi paste or buy powdered and prepare
sushi bambo mats

1/3 c rice vinegar
1 1/2 Tbls sugar
1/2 tsp salt


Cook rice according to directions. Stir with wooden paddle till the steaming stops. Mix the last three ingredients in a small bowl and add to rice, stir till absorbed.

Place sheet of nori on bamboo mat put rice on it, not the 1 1/2 inch closest to you. Be sure and use wet hands or you will have rice all over you.

In the center run a stream or trail of wasabi paste, a green bean or two, a carrot, a bit of radish, ginger, cucumber, strip of salmon, (really whatever you like). Roll the nori sheet and overlap the unriced edge to secure. Dampen and transfer to cutting board. Using sharp wet knife slice into 3/4-inch sections.

I like to put them on a bed of rice or bean noodles and decorate with left over veggie pieces. I add some rice vinegar, sugar and horseradish paste to the noodles.

Kosher sushi....


You can use any of the above "fillers" in any combination you like or singlely.

You can try any other fresh, fresh, fresh kosher fish, too! Personally we prefer Lox to smoked salmon in sushi.

You can also put thin slices (1/4 in x 1/4 in x length of block) of cream cheese in the salmon ones - is Great!!.

Serve all of the above with wasabi and tamari. Use your fingers and enjoy!
