The Hebrew metaphor for eating someone's flesh meant to destroy that person. Why dont you believe in a literal Leviathan in the seas that will be killed with a literal sword by God, then? Or, why dont you believe that your thinking is processed in your kidneys? Or, why dont you believe that light has a literal home? Or that God has literal giant legs and our Earth is a literal footstool for them?
You are welcome to demonstrate why the sitting upon the circle is literal, while Leviathan in the seas is not. Both is in Isaiah.You can't go "X-ing a Paragrab" with the Bible.
In other words, you can't apply literalism in every passage.
That's part of Bible maturity: knowing what is literal and what is metaphorical.
Sometimes the Bible speaks of the shape of the earth in two dimensional terms:
Psalm 103:12 As far as the east is from the west, so far hath he removed our transgressions from us.
Sometimes in three:
Isaiah 40:22a It is he that sitteth upon the circle of the earth,

And Psalms are songs so obviously that, trying to use them for any technical description is absurd.

When God speaks in the Bible, He can speak in both literal and metaphorical terms. I'd like to see where He definitively states the earth as flat, rather than somebody trying to extract meanings from what He said which are not there.

The genre of Psalms, Job or Isaiah is not literal.
