I make everything from scratch, so this may not appeal to everyone. Furthermore, I only eat whole foods. I hope I don't scare anybody off, but rest assured it is a healthful recipe. And tasty too!

Pumpkin Chili
1 large onion
4 cloves garlic
1 yellow pepper
1 ½ - 2 c. water
2 t. chicken base
2 T. chili powder
¼ c. fresh cilantro (optional)
1 ½ c. baked pumpkin
2 c. black beans, cooked
Cayenne, sea salt, to taste

Sauté onion, garlic, and pepper in extra virgin olive oil. Puree the rest of the ingredients in Vita-Mix. Pour mixture into sautéed vegetables. Add black beans and seasonings to taste.

Sounds delicious! Can it be made without the chili powder or would it change the recipe too much?

My favorite winter foods are homemade hot chocolate and pumpkin pie. Hot chocolate is so basic, just milk, cocoa powder and sugar in a saucepan heated on the stove. I'd share the pumpkin pie recipe, but then my mom would have to kill me. ;)

I would delete the chicken base before the chili powder, but that is if you want pumpkin "chili". If you left everything the same and only left out the chili powder you would most likely have a tasty soup. :D

You could make creamy pumpkin soup by leaving out the chile powder and black beans, then after everything is cooked, put it in the blender.

The wonderful thing about recipes like these is you can tweak them according to your taste. You can use canned pumpkin as a substitute for freshly baked. Same thing with the black beans. For that matter you can use garlic powder and onion powder if you don't have onions and garlic. I just happen to prefer my foods to be as close to the way God made them as possible.

Play around with it and have fun! :)

500g of streaky bacon
1.5kg of stewing steak
Beef stock
300g button mushrooms
300g pickling onions
fresh parsley.

Fry the bacon and remove. Brown the meat in the bacon fat and remove. Add some flour to the dripping to make a smooth paste. Stir in the hot beef stock and stir until it thickens. Transfer to an oven dish with the meat and cook for an hour or so. Then add the whole button mushrooms and whole onions and cook for another hour. Add the chopped parsley at the end.

Serve with French bread and/or French Fries.

Sautee sliced leeks, carrots and potatoes in butter for about five minutes. Parboil orange lentils, drain and add to the vegetables. Pour over a robust chicken stock and cook for about 20 minutes. Let cool a little, and then liquidise. Season with salt, pepper and parsley. Serve with a swirl of cream, and plenty of crusty bread and butter.

Broccoli and cauliflower casserole. Winter reminds me of casserole for some reason.

1/2 cup uncooked white rice
10 ounces broccoli florets
10 ounces cauliflower florets
1/2 cup butter
1 onion, chopped
1 pound processed cheese food, cubed
1 (10.75 ounce) can condensed cream of chicken soup
5 3/8 fluid ounces milk
1 1/2 cups crushed buttery round crackers

In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Drain and set aside.
Simmer broccoli and cauliflower florets in water for 10 minutes, or until crunchy. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
In a large saucepan, melt butter and saute onion. Stir cauliflower, broccoli and rice into the saucepan. Once the vegetables and rice are coated, stir in the cheese, chicken soup and milk. Transfer the entire mixture to a 9x13 inch baking dish and sprinkle the crackers on top.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 minutes.

This sounds tasty to me. I love lentils.

Here is a similar recipe. This has a very strong garlic flavor for those garlic lovers out there. It may be adjusted for those who are not.

Egyptian Lentil Soup
1c. red lentils
2c. onion, chopped
8 cloves garlic
5c. water, more if you prefer thinner soup
1 1/2c. cooked barley
2T. Cumin
3t.salt, or as desired
1t. turmeric
1/2c. cilantro leaves

Cook first 4 ingredients for 15 min. Pour into Vita-Mix, along with barley and remaining ingredients, and blend until smooth.

Chai masala and hot chocolate!

Chai masala:
1 Tbs green cardamom
1 whole star anise
5 inches of cinnamon stick
3/4 tsp whole allspice
1/2 tsp whole clove
1/4 tsp whole black peppercorns
a dash of ground cayenne pepper

Grind it into a powder.

I use 1 tsp of this for each cup of water and 1-1/2 tsp tea, along with a sliced up piece of fresh ginger about the size of the first joint of my thumb and about 1/3 of a fresh bay leaf. Simmer for 5 minutes.
Then add a cup of whole milk, a bit of vanilla extract and sugar. Bring to a simmer and strain it into a good mug.​


Hot chocolate:
To a mug add a couple of tablespoons of good chocolate, a good dash of cinnamon, a pinch of ground cayenne pepper, about 1/4 tbsp of vanilla extract and a couple of ounces of half and half. Nuke it until it gets hot, about 30 seconds or so, then whip it up with a fork to mix it. Nuke it again if required to melt the chocolate, then fill the mug with milk and nuke it until it's hot.​

Oven Browned Beef Stew

2-3 lbs stew meat, I buy a roast & cut it myself
2 large onions, halved & then sliced
6 or so potatoes, cubed
carrots, sliced or chopped, I use the "baby" carrots, until it looks like enough
3 stalks of celery, sliced or chopped, or I just use celery salt if I don't have celery
1 small (8 oz) can of tomato sauce
1 TBSP sugar
flour
salt
pepper
1 cup of water

Spray a large ovenproof dutch oven with oil & place meat in the bottom. Sprinkle with flour, salt, pepper & stir to coat. Add vegetables in order, salting & peppering each layer. If I am using celery salt in place of celery, I omit the regular salt. Mix tomato sauce, water, sugar (to taste), & 2 tsp flour. Pour over top & add additional water to come almost to the top of the veggies. Do not stir. Cover & bake at 300* for 3 hours. Check periodically to see if needs more water. Do not stir. I usually bake this at a higher temp for a shorter time. When you take it out to check to see if it needs more water, just check the veggies to see if they are done. When done, stir & serve with biscuits.

Split pea soup is one of my favs,just follow the recipe on the bag,but add maybe 2 diced carrots and potatoes,and just before serving add 1 large spoonful of butter or"I can't believe it's not butter, margarine,and 2 tsp sugar,salt & pepper to taste.
I also love New England Boiled Dinner which is just corned beef,cabbage(cut in wedges),potatoes and carrots,recipe is on bag.
Potato soup is another good one,but try cooking your potaotes in chicken broth instead of water,when tender, drain,all but about 1/3 of the broth,add milk to this,amount to your desired thickness,of the soup. Mash some of the some of the potaoes with a fork. I always saute onion and celery in butter/margarine before adding the potaoes and broth to cook. A lady I know cooks hers this way,but also adds velveeta cheese to hers.

I like this vegetarian dish, although chicken can easily be added.

Black Bean and Sweet Potato Burritos
1 lb. black beans
1 large sweet potato
(basically you want about a 2 to 1 ratio of beans over potato)
1 large yellow onion, chopped
2 cloves garlic, minced
2 T. fresh cilantro, chopped
2 t. cumin
1 tsp. chili powder
½ t. cinnamon
salt and cayenne to taste
tortillas or taco shells
4 oz. shredded cheese, such as a mild jack (I use raw cheese, since it has not been processed. Processed foods do not contribute to good health.)

Soak beans overnight. Drain and cook. When beans are done, usually about 2 - 2 ½ hrs. steam sweet potato, or bake while beans are cooking. Saute onion till soft, add garlic and cilantro and cook another 2 min. Mash garlic while onion and garlic cook. Add beans to onion and garlic, spices, and sweet potato. Make burritos, adding cheese, or serve open faced on warmed taco shells broken in half, topped with shredded cheese.
