We sing the doxology every Sunday after the offering... it goes Offering collection, prayer of thanksgiving, doxology. We don't always use the same tune, or the same words, but the function is still the same. I think alternating the words, tunes, etc., helps to remind us of its importance. 
One common tune for the doxology (words posted by caednkat) we have used is tallis' canon. "old hundredth" is the most common tune (to my knowledge), and we use that one too.
Sometimes we sing the last verse of "now thank we all our God" (tune name is: nun danket alle Gott).
All praise and thanks to God
The Father now be given
The Son and Him who reigns
With them in highest heaven
The one eternal God
Who earth and heav'n adore
For thus it was, is now,
And shall be evermore.
Another one we use a lot is the final verse of "Oh for a thousand tongues" (tune: Azmon)
Glory to God and praise and love be ever ever giv'n;
By saints below and saints above the church in earth and heav'n.
Those are the ones I can think of at the moment.
