no, Christians should not keep all 613 laws. Even a Jew cannot keep all 613 laws. Even Jesus could not keep all 613 laws.
Questions like this actually indicate a lack of awareness generally as to the nature of the law, the scope of the law, the intent of the law and the duration of the law!
All the above can actually be answered by reading the Torah, unfortunately many Christians find it boring, intimidating or simply old, replaced by something better.

actually none of these things Jesus did broke anything.
Jesus broke extra-biblical customs around the Sabbath in the context of healing (see tractate Shabbat in Mishnah)
Jesus touched a leper and women with blood... this is not the direct breaking of a command at all, in fact the Torah lays down specific rules what to do on these occasions.

You are right, He did write them, and then He walked among us and showed how they were intended to be kept, as with joy, not burdensome at all.

yes, the traditions attached to the Law were burdensome. There is a difference between the Law that God gave and the traditions that man added.

Yes, it was the Oral and traditions - they attributed those to God through Moses as well and believed that they were as valid as what was written. Many Jews still view the Mishna, Talmud, and Gemara the same today.

That has nothing to do with a Jews inability to make animal sacrifices for sin which didn't apply to Jesus as He was without sin.
That isn't what is being implied with the 613 thing. The point is the keeping of the whole law without chosing how or which ones apply as James indicates.

These are not some abstract rules Moses thought up over a cup of coffee. It was God who decreed that anyone breaking the Sabbath should die. God determined the sorcerers die for their idolatry.
Why don't you pontificate into the air and rage at God, telling Him of the injustice of His commandments. Let Him know how immoral you think they are!!! The remember the Torah is Holy, it is good, it is spiritual. But you can't keep it cause you are none of those things in your own power.
