So I'm sitting here waiting for mrs. menno to decide what kind of cookie she's gonna make for her ladies cookie exchange thing--got the email set up and awaiting her decision.

But I have to get this off my chest:

Is there anything more useless than a raisin cookie? I mean, with the same effort choc chip cookies could be made, or at least peanut butter or oatmeal cookies could be made, but no, last week at some OTHER cookie exchange thing she brought home 2 doz raisin cookies:doh::doh::doh:.

So what do ya like the best? Those ones with the Hershey kiss on them are pretty good...:yum:

Well it looks like she's going with some pumpkin cookie recipe...guess that don't sound too bad, as long as there ain't raisins in it!~

And see, I don't hate raisins, afterall Raisin Bran is my favorite cereal, just don't want them in my cookies.

I love chocolate chips, I just don't want them in my cereal.

:preach: Everything has a place in this world...

Oh, dear. No raisins for me in anything. Choc chip is good for every day. When we want to be flash we make melting moments, or caramel nut slice and when everyone's home we make cookies for the masses. They're all yummy.

OK ya got my attention, how do ya make a "melting moment"??

by far, the best cookie ever to grace my pallet is the 7 layer cookie. It has a graham cracker crust, chocolate chips, butterscotch chips, coconut, sweetened condensed milk, walnuts (I think) and something else. My sister used to make them around Christmas time and send them to me. I am just too lazy to make them myself.

O.K Menno, this is for Mrs Menno. Tell her the dough is meant to be short (she'll understand) just be carefull not to make it too short or the biscuits will fall apart on you.

8oz butter (you can use marg but they taste better with butter)

1/3 cup icing sugar (the stuff you use to ice cakes - I don't think you guys call it icing sugar)

1 1/2 cups plain flour

1/2 cup corn or rice flour (I prefer rice flour, its a finer texture.)

Cream butter & sugar till light & fluffy. Add sifted flours & mix well.

Take dough in teaspoonfulls, roll lightly into a ball. Place on greased baking tray and flatten gently with a fork. Try & keep the size even so step 2 isn't a drama. Bake in a moderate oven 10 -12 minutes or until golden brown.

When the biscuits are cool ice two biscuits together to make your melting moment.

Icing: 2 oz butter
1/2 cup icing sugar
flavouring. I like plain vanilla but lemon is nice, especially with a little grated rind added. You could use watever you like. I've tried orange and that was nice too. Beat butter & icing together until smooth & creamy. Add flavouring and ice biscuits together in pairs.

I hope I've explained so that's understandable. These biscuits should literally disolve at the first bite.
