I made rum balls for the first time this year and they turned out amazing! Dairy and egg free (as per my allergies), and lower in sugar (as per my HIPS), but plenty of rum. And I gotta say, they are at least as good as any I\'ve tasted, and better than most. :D

Uh, oh... DH is from a Dutch background and just started discussing with his sister some of the dishes they\'re used to at Christmas. Yep, I think it\'s about to get very fattening around here.... lol.

It is funny because most of my life I have loved Christmas. And most of the year I look forward to it.

But for the last few years (since I met DH, who surprisingly likes it more since he has met me, lol) I have come to hate it during the actual season. The reason being: plans and travel and obligation. There is no room for enjoying the season. It is all about getting the right gifts in time, traveling, spending very uncomfortable days at families homes (and massive guilt trips from some if we don\'t, of course), and then fighting the weather to get home. Not to mention, checking the weather to see if we can even get there to start with. Don\\\'t get me wrong, we\'ve got a load of nieces and nephews that we\\\'d love to spend time with and see them open our presents for them. Just a day to hang out with the kids and goof around would be great. But that\'s not our Christmas. Nope, not at at all.

We are right there again this year, stressing, constantly re-planning, dealing with hurt feelings, etc.. I hate it, I hate it, I hate it. Waiting on the weather to see if we can travel tomorrow to meet obligations. And if we cannot, THEN I can start planning our Christmas here with very little warning and very few places I can get to in this weather to get dinner ingredients, etc. Forget local friends, of course. They cannot even factor in here at all. No, this is no fun. This is not the Christmas I wanted, ever. I think the Kranks had it right. A cruise sounds very good right now. Then there is the problem with DH\'s relatives who are not talking to one another, but who still expect to see us (and we would like to see them too). BUT they cannot all arrange to see us at appropriate times, so someone\'s feelings have to be hurt because we did not designate the appropriate day just for them. blah, blah, blah!!!

We didn\'t even put up a tree this year. Yes, partly that is because we have a one year old kitten who would make a mess of it. But we did very little decorating as well because we expected not to be here this year again. At least we put up a few lights, which I love. But it was not much overall.

I am so glad it is snowing, and I hope it snows many more inches tonight so we can finally make official plans to stay here in the morning. Yet that won\'t solve next year. That will be another nightmare waiting to happen. I am sorry to be such a Grinch. But I am just SO frustrated right now!!!!! When did Christmas become so impossible and frustrating?

I know what you mean. I lost my dad back in 2003 and although I do love this time of year, there is and always will be an empty hole in my heart that no one will be able to fill. I know what you mean. I lost my dad back in 2003 and although I do love this time of year, there is and always will be an empty hole in my heart that no one will be able to fill. Sorry to be such a grumpy gus, you guys. I'm just really frustrated that it always comes down to this. Even today we're running around getting ready to leave just in case the roads are just barely decent enough to drive (oh what a joy that will be). But we still won't be able to make that call until it's basically time to leave.

I guess Dad really represents what Christmas was before. Even a few years ago it was something to look forward to. Yes I had to travel and I hated that. And I never got to sleep in my own bed on Christmas Eve. But once I was at my parents' place it was time to relax, eat some good food, play some games and just hang out with the family. There were no guilt trips or obligations. Just "hey, we're celebrating Christmas, come join us!". Now it's totally different. And I'm just not adjusting very well to it.

Hm, the snow is coming down harder and harder now... Maybe I shouldn't put the ham in the freezer just yet.... lol.

You don't sound like a grumpy gus, desi - you just sound like you're having to make some adjustments :hug: Tis not easy, especially at Christmas.

Besides... rum balls :yum: I'm almost sure it's impossible to sound like a grumpus when you've just posted about rum balls. Speaking of... recipe, please? PLEASE? :p

... When I was a kid, we did Advent Devotions each night, and a part of that centered around the manger scene. Each day, we'd move Mary and Joseph closer (they started on a table in the whole other end of the house!), we'd just have the animals there to start. This would continue all through the 12 days of Christmas, as the Wise Men came closer. We'd sing an Advent or Christmas song. I miss that.
... My grandparents from Wisconsin use to visit; I miss them.
... My grandpa made egg nog. With LOTS of rum. I was a little boy and learned that the whippped cream floats to the top and the rum sinks to the bottom. So, I'd take the laddle, VERY carefully let is slowly fall to the bottom, tip it, and rise it up - getting mostly rum. I don't remember it, but evidently I got plenty "tipsy" one Christmas Day and from then on, the drink was kept out of my reach and only a parent could give me some.
... Christmas cards and letters. I got TOTALLY into that this year.

Well we ended up traveling on Christmas day when the roads were somewhat passable. it was pretty much what I expected. Rushed and stressful, and not helpful for my already not-so-good health. This morning we also hit a huge patch of ice and slid at least 1/2 a KM at 60KPH. The roads had been clear and wet prior to that patch so it was quite a shock. It is only by God's grace that we didn't hit anyone or anything, and were able to stop before crashing into the people in front of us. We are so thankful for that. And we're thankful to finally be home. Yay, it's over! And next Christmas we're staying home and starting our own family traditions finally. I'd like to convince DH that we should spend a few hours volunteering at a soup kitchen or something on Christmas day. That would be really cool. Family can come visit us if the want (prolly won't, but that's fine:D).



Anyway, here's how I made the rum balls. I'm amazed how easy they were! You pretty much just add whatever you like until you like the flavour.

First, I made something called Wacky Cake. It's basically an egg-free, dairy-free cake. It usually comes out rather dry, which turned out to be perfect for the rum balls. There are lots of variations on this recipe online. But of course if you don't have the food allergies that I do, then regular cake works just fine too. Doesn't even have to be chocolate (but why wouldn't it be??? lol).

Once the cake is cooled, break it into crumbs. You can use your hands or a food processor for this, depending on how dirty you want to get. Then dump it into a large bowl. From there you can add a variety of ingredients to play around with the taste and texture until you're happy. I used:

about a teaspoon of powdered sugar (use more if you like it sweeter),
a teaspoon of cocoa powder (use more if your cake isn't chocolate),
butter and honey for texture (I used aprox. 2 TBSP of each),
and rum to taste.

Start with small amounts and gradually add more until you're happy. For one cake I used aprox. 1/4 cup of rum, maybe a bit more. I also added some vanilla extract and a bit of caramel and imitation rum flavouring as I just happened to have them on hand.

Once that's all mixed up, separate into small balls, roll them in your hands, and place them on a baking sheet lined with wax paper. Then, place the sheet in the freezer for at least six hours. Overnight works well.

Then melt chocolate chips in a bowl. I used the microwave and it was fine. Lightly coat each ball in the melted chocolate, and then VERY quickly roll them in whatever topping you like. (That part gets very messy, but it's fun!) I used a combo of chocolate sprinkles and crumbled marzipan for my topping. You can use crushed nuts, powdered sugar, or shredded coconut if you prefer. Because the balls are so cold, the chocolate will set very fast. So once you're done rolling them in the final topping, they're ready to serve. To store them, just put into a sealable container and store in the freezer. They don't get hard inside when frozen. So they're ready to serve right out of the freezer.

I brought them on our trip and they were a huge hit with the family. Even DH, who doesn't usually like sweets, thought they were pretty good.
