Dave, have you shared with us in GE, the recipe for that curry?

Chicken Curry for TWO


One Large frying pan or, Wok
3 tablespoons Sunflower Oil
two cupfuls diced onion
two cupfuls SLICED mixed peppers
two cupfuls mixed veg [peas, carrots, green beans, cauliflower florets]

pour oil into pan and WARM on low heat
when oil MOVES [?] put in the ingredients listed above

STIR OCCASIONALLY
and while these are SOFTENING
add, mixed herbs... Tarragon, Parsley, Thyme

Rinse and dice 3 large Chicken Breasts
Move VEGGIES to one side of the pan
into the juice that has accumulated/ drained down
add the chicken to the pan
and stir only the chicken 'occasionally'

While chicken cooks through
rinse two [or three] cupfuls of Basmati Rice
until water is clear
I use a fork to ensure excess STARCH is removed from rice

Add your favourite Curry Sauce to the pan
I use 225grams Rogan Josh and 225 grams Korma or, Chinese sauces
and stir until veggies chicken and sauce are evenly distributed
allow to continue cooking slowly [a little bubbling is COOL] :)
Do not allow curry to stick to bottom of pan/ stir regularly


Cover the rice with one pint of cold water per cup of rice
SALT the water and bring to the boil
then turn it to simmer until water has been taken up by the rice
drain and rinse thoroughly
drain and serve to plates... making a rice ring on each plate

Fill the ring sharing the curry between the plates

The above, never takes me, less than 45 minutes
ie: start to finish


When 'Joyce' comes to Sunday dinner [as she did today]
I add ANOTHER BREAST of chicken
I cook Mary's seperately [with Chinese or Korma Sauce]
and add two desertspoons of Hot Curry Powder to the pan
when the chicken is cooked [ie: just before the sauces are added]
For myself and Joyce

I like it hot, and will sometimes treat, Joyce and myself
to Madras Curry Sauce

Afterwards I enjoy a cold beer :)
Newcastle Brown Ale [for it's taste]

I am really dumb regarding curry sauce...I will start learning by checking these brand names you suggest at my stores.

Are the tarragon, parsley and thyme dry ingredients?

The Rogan Josh is a past or sauce?

Oh my gosh..225 grams????????????? I dont know metric...do you know how much that is in Tablespoons or Cup measures?

Im sorry to ask so many questions....I really want to try it. Your photos of this dish were impressive.

That's a big question kaykay....an answer I have never shared and a subject I have guarded with passion. Here goes. When I first came to this forum, I had been through a bad experience and was badly broken...and needing a healing from a trauma. I had run away from the place the trauma occured and all the people involved (family).

Over the year a beautiful healing began to take place and I grew more and more in my prayer life, I grew to trust God and submit to His will for me if He would ask me to return. ( I was hoping He would not ) Knowing that circumstances could force me to return to the place where the hurt took place. It took a long time to get over the nightmares, fear and hurt. Today that time arrived. My mother-in-law is in need of care and I have agreed to go back and face whatever I must face ( a son, daughter-in-law and grandchildren ) to nurse my mother-in-law (94) but I go now with the Holy Spirit ahead of me. It has been a wierd day as a bright shiny cross of light appeared in my kitchen and we could not explain where the light source was that was causing it. Plans for the trip are underway...I'm a bit in shock.

I will have complete internet access with my mobile broadband (Sprint). We will not leave for a week yet as things like vehicle maintainance must be readied. We travel with an RV full of my personal belongings for a long stay. I will need to stay in touch here for I'm so grateful to have friends to turn to and keep my focus in a right and positive direction. I keep praying..."Are you sure God, this is what you want?" I may be remaping my life.

The HERBS are dried chopped leaf
[a couple of pinches of Rosemary also helps]
as for quantity ? I am very liberal with them
that is to say that added together
they might easily fill a dessertspoonful, if not, a slightly heaped one

Sauces [quantity]
Locally, these are available in 450 grams jars
250grams = 8 ounces
so, one of each, will do TWO MEALS
[keep refrigerated after opening, But use within a week]

Rogan Josh is 'almost' Polished Mahogany in colour
while Korma, is Yellow/Orange and Chinese, is Yellow/Green

Five minutes after adding sauce
a 'taste' will allow you to adjust 'for taste'

Practice, will provide a better 'appreciation'
of, HOW TO gauge amounts for, desired SPICINESS
Different people have, differing TASTE TOLERANCE
ais:
Mary doesn't like it 'really HOT' but loves it Korma'd /Chinese'd

If the sauce is 'too loose' prior to serving
then stirring-in a teaspoonful [or two, or three]
of mashed potato powder
will take that up without spoiling the flavour

If you have, accidentally, put in too much oil to begin with do not worry
as you can,
after allowing to simmer gently for a few minutes, pour some,
from that which will accumulate on the surface in the pan
Just be careful of spillage on outside of pan before returning to heat

Sunday last, I threw in, a handful of sun-dried sultanas
at the time of the adding of the sauces
these reconstitute, a 'little' during the simmer
[absorb moisture] and their 'meat' is a soft grape texture

Mary, likes her rice to be HOT rinsed [boiled-water]
but I figure that this is because it helps keep her curry warm for longer
I find cold water rinsing the rice can give respite to tongue and throat
when you enjoy HOT curry

You have been very welcome to have me describe my 'technique/ taste'

When my wife and I met my mother was so strongly opposed to our relationship that my mother's boy friend offered to pay my wife cash in the amount of several thousand dollars to 'simply disappear'. She did not and we will celebrate our 36th anniversary next month.

I 'd always been very close to my mother, definitely a 'momma's boy' so the problems were extremely difficult very hard.

Initially, each meeting with my mother, very quickly would come nearly to physical violence between her and my wife with me as the buffer. Finally, we moved away from California to Wyoming at least in part due to this situation and severed the extremely trying connection for a couple of years.

God was working on the situation and without providing details, eventually these two most important females in my life moved into a unarmed toleration. This toleration grew to a mutual but distrustful respect for each other. As the years passed a warmth began to replace the cold that had always existed between them with me still in the middle. In the last few years before my mother's death in October of 2006 my wife had finally found in my Mom, the mother she had never really had and my Mom found in my wife the daughter she had always longed for among 4 sons.

When my mother died, my wife cried sincerely along with me not only for "my mother" but for "her mother".

God is truly able in the worst of situations, if we only trust Him. We cannot do it, but He can!

Here is a little thought that a friend emailed to me today figured I would share it.
I wonder what would happen if we treated our Bibles like we treat our cell phone?

What if we carried it around in our purses or pockets?
What if we flipped through it several times a day?
What if we turned back to go get it if we forgot it?
What if we used it to receive messages from the text?
What if we treated it like we couldn't live without it?
What if we gave it to kids as gifts?
What if we used it when we travelled?
What if we used it in case of emergency?
Unlike our cell phone, we don't have to worry about our Bible being disconnected because Jesus already paid the bill.

That is some thought, the cell phone, and mine is in my bag always but not switched on, just when I need to use it!
My daughter asked why I carried it when no one could get through

some thinking to do here, What if I carried my Bible for "emergency only" ..? What if I am not "switched on ".. just my pondering...
