But the Pope and the priests are considered mediators, no?
As in mediators between man and God? No, we can do that for ourselves.
If you are referring to things like confession that is whole other thing. In confession, we do not just confess to our priest, in fact I don't think it's entirely correct to say that we confess to our priest at all, but the priest is there to guide us kind of like a physician.
What most people (including Catholics) may not know is that, we don't have to do confession to our priest, however the alternative is to confess our sins to the entire congregation.
Precisely, what is the scope of the Pope's flock?
First and foremost, the people of diocese of Rome with presbyterate (priests) of that area. Then the sees west of Jerusalem (though this is now largely defunct). Finally, all of Christendom of the world via the bishops who serve as the actual pastors while the Pope serves as the overall overseers, in this he is a symbol of unity on Earth.
