He would "bring judgement against all the gods of Egypt."

Egypt was fulled with their "gods", their magician could also worked out magic like Moses did. By bringing God's judgment on the 1st born of Egypt God declared His victory and dominion over the "gods of Egypt"
which they worship, to open their eyes that their "gods" could not protect them from the Judgment of the True God.

Behind those 'gods' were demonic powers and principalities. And that is where the warfare exists. Those beings had influence over the lives of the people. Not just a state of mind, but also an occult reality.

Ephesians 6:12 [Full Chapter]
For we do not wrestle against flesh and blood, but against principalities, against powers, against the rulers of the darkness of this age, against spiritual hosts of wickedness in the heavenly places.

Deuteronomy 32:17
They sacrificed to demons, not to God, To gods they did not know, To new gods, new arrivals That your fathers did not fear.

2 Chronicles 11:15
Then he appointed for himself priests for the high places, for the demons, and the calf idols which he had made.

1 Corinthians 10:20
Rather, that the things which the Gentiles sacrifice they sacrifice to demons and not to God, and I do not want you to have fellowship with demons.

1 Corinthians 10:21
You cannot drink the cup of the Lord and the cup of demons; you cannot partake of the Lord’s table and of the table of demons.

They do exist. All these gods we hear about in the past are fallen angels, and rephaim.

Deuteronomy 32:8 "When the Most High gave to the nations their inheritance, when he divided mankind, he fixed the borders of the peoples according to the number of the sons of God."

They are the angels that rule over the nations. Daniel 10:13 "But the prince of the kingdom of Persia withstood me one and twenty days: but, lo, Michael, one of the chief princes, came to help me; and I remained there with the kings of Persia."

After Jesus completed his mission the gods actually stopped working. It caused Plutarch to write about the cessation of oracles and even the death of a god, and it caused others to bring accusation against the Christians as Eusebius relates.

“Nor, since the divine power of our Saviour in the Gospel shone forth like light upon all men, is any man now so mad as to dare to propitiate the murderous and bloodthirsty and misanthropic and inhuman daemons by the murder of his best-beloved, and by the slaughter of men in sacrifices, such as the sages and kings of old, being verily possessed by daemons, loved to practice.
But with regard to the fact that the evil daemons no longer have any power to prevail since our Saviour's advent among men, the very same author who is the advocate of the daemons in our time, in his compilation against us, bears witness by speaking in the following manner:
[PORPHYRY] 'And now they wonder that for so many years the plague has attacked the city, Asclepius and the other gods being no longer resident among us. For since Jesus began to be honoured, no one ever heard of any public assistance from the gods.'
This is Porphyry's statement in his very words. If then, according to this confession, 'since Jesus began to be honoured no one ever heard of any public assistance from the gods, because neither Asclepius nor the other gods were any longer resident,' what ground is there henceforth for the opinion that they are gods and heroes?”"

Psalm 82 also parallels this nicely.

Exodus 12:12 specifically states that the Lord said He would "bring judgement against all the gods of Egypt." Forgive my confusion, but why did God bring His judgement against something that doesn't exist?

Becuase gods are demons.

A lot of people might have called themselves gods, and God also said this:

[6] I say, "You are gods,
sons of the Most High, all of you;
[7] nevertheless, you shall die like men,
and fall like any prince." Psalm 82:6-7

Humans are not gods, but can become pagan gods if become demons.

I was just quoting scripture. I don't think of people as gods, but in those days, I think some people might have called themselves gods. Wasn't that true in Egypt?
