The word clean and unclean here is to differentiate between animals that can be used for eating and animals that cant be used for eating. In the ancient Hebrew language, the word clean means pure, so the animals that can be eaten are considered pure and healthy for the body.
For example, in Leviticus 11:1 - 47 and in Deuteronomy 14: 1-21, God gives instructions about animals that have had a cleft hoof and chewed the cud were edible. God considers those edible animals as healthy or clean for human beings. Any animal that did not have cleft hoof as well as did not chew the cud, God considered them as unhealthy and unsuitable for humans to eat, so unclean.
So if you substitute the word clean for the word healthy and unclean as unhealthy for eating, then it will make sense to you.
The word clean in ancient Hebrew also means to be ceremonially pure and this is important for example, when they are offering an animal as a sacrifice on Gods alter. Since the animals that are healthy and can be eaten are considered the best animals, then it would naturally be important, that when they are offering God something, that they would offer God the best, healthy and pure animal that could be eaten by people.
This is also important for another reason, because God was teaching them about the idea of Sacrifice. To sacrifice something, is to sacrifice from what you consider as delicious and necessary to you. God doesnt want our left overs, because when He gives, He always gives the best and out of His eternal goodness. He sacrificed himself for our sake so that we may have eternal life when it was our sins that brought caused so much grief.
So he was teaching the Israelites about self sacrifice and how to show God that they love him. He doesnt need any sacrifice, yet to help them grow spiritually, he set up this system to help them learn about Love that sacrifices and to point out a future event about Gods sacrifice on the cross.
