Here are a couple...


6 large baking apples like Rome Beauty, Cortland, or Gala
3 tablespoons butter
3 tablespoons brown sugar
1/4 cup dried raisins
1/4 cup walnut or pecan pieces
1 cup hard apple cider

[size=-1]Preheat the oven to 400 degrees F.

Core the apples, leaving the skin on. Then, with a small, sharp knife, make an incision completely around the apple about 3/4 of the way from the bottom and 1/8 inch deep.[/size]
[size=-1]Cream the butter and sugar. Add the raisins and nuts. Divide the mixture between the apples, putting some in each. Place the apples in a small cassarole or ovenproof baking. Pour the cider around the apples. Bake about 30 minutes until the apples are tender, basting the apples 2 to 3 times during baking. [/size]

[size=-1]Serve warm with a little cider spooned over them. For the adventerous, add some whipped cream or vanilla ice cream. And don't forget dash of cinnamon![/size]

1 small apple (cored, and peeled 1/3 of the way down)
1 tablespoon raisins
1 teaspoon lemon juice
1/2 teaspoon honey
A couple drops of rum flavoring
A dash of cinnamon
1 teaspoon water

Oven 350 degrees F.
Combine all of the ingredients except the water and apple.
Stuff this into the apple.
Place the water in the bottom of an ovenproof custard cup, put the apple in the cup.
Cover the apple with foil and bake for 35-45 minutes.

Here's a simple stovetop recipe my Gram used to make for me...and now I make it for my girls.


5 sliced apples
1Tbsp butter
1/2 cup sugar
cinnamon to taste

Bring all ingredients to a boil. Simmer until apples are soft. Stir occassionally.

I loved cooked apples. And pears cooked in the same way are delicious. My oldest daughter LOVES these recipes, but my little one and my husband seem to have some issues with warm fruit. ;) I always say that my oldest, Emily, is my little country girl...just like me. :) My baby, Eden, inherited those weird yankee genes from her father. ;)
