The Low Down on High Stats~
High Stats have advantages if you're breeding animals that you plan on putting in battle or leveling up. They can save you on blessings if that is your goal. Here's an example:
Here is my girl, Sapphire

She has been fully leveled up. It cost hundreds of thousands of blessings to do this. Most of those blessings were not spent for the actual training battles, but for healing. A 200 point hit will cost you 500-800 blessings to heal. As you get to the higher levels of training, 1000+ point hits aren't that uncommmon. That is a whole heap of blessings to burn through. See the halo? That means that Redneck Crow spent umpteen thousands of blessings healing this girl after her fights.
This is Sapphire's grandson, Starfire

Starfire is at level 10 as of this writing. He hasn't taken a single hit yet. So all of my blessings have been spent on actual leveling, not on healing. He's much more economical to level up than a pet that has been created from scratch. Based upon his stats, I'm guessing that I will have to do some healing on him along the route, but it will not be nearly as much as I would spend on a pet that started out level 1 with normal starting stats.
This is Sapphire's granddaughter, Heritage

As of this writing, Heritage is level 50 and has not taken a single hit in training. All the training blessings are spent on actual training, not on healing. At this point in her training, I estimate that she has cost me at the very least 20,000
fewer blessings, and probably more than double that if I actually sat and calculated it out, to train than her grandmother,Sapphire. As it goes up, I expect the savings to increase dramatically.
Baseline, I find that it costs about 350-400 blessings for the training battles alone per level that you raise your pet. If you buy a pet leveled to 10, you're reaping about 3500 to 4000 points worth of training.
If you plan on leveling your pet up, figure on healing costing you about 300 blessings per level on a created-from-scratch pet on the lower levels, and about 1000 to 5000 per level on the higher levels.
So what are the advantages of created pets vs pets that have been bred from high level pets?
If you want a pet for having a pet only, created pets give you exactly what you want and in exactly the color and gender you choose. You aren't wasting extra blessings for stats, and those stats are not going to be any advantage to you if you don't plan on leveling it up. If you aren't particular about the pet and just want any pet, creating an egg is the cheapest route to go. 900 blessings, and you might luck out and get one from a couple of high level dragons. You pays your blessings and you takes your chances.
If you want to level up, though, it's a huge advantage to have a pet that has been intentionally bred from high level pets. Take a look at Heritage, who is level 50. She hasn't taken a single hit in training. She will cost me far less to level up than her grandmother, less than half.
My advice is that you get pets that suit the purpose you have in mind for them. You don't buy a Lamborghini to drive the kids to school, and you don't put a Honda Civic in car races. If you are realistic about your expectations and plans when you select a pet, you can get the most bang for your buck. Or for your blessings.
