Thanks for sharing that, I will certainly look that up. Every recipe I have found for making your own wine calls for yeast and not a one of them made the distinction as to what type of yeast to use.
Please note the change I made in the original post you quoted, Charles. Instead of "baking" I intended to say "wine making" but I think you got the point anyway.

For the sake of being pratical, as others have mentioned, I think grape juice is a better choice than alcoholic wine for the Lord's Supper. Short of an allergy, everyone can partake, regardless of age or their past history and it is likely less expensive than purchasing actual wine.

The argument over fermented and unferemented wine is one than can go back and forth, because I don't think there is a definitive text on the matter. I think some people get too hung up on stuff like this.

This was pretty much a non-issue until Welch invented the pasteurization process for grape juice which halted the natural fermentation of grape juice. I love false piety and asceticism (Col 2:18)
So are you saying that grape juice was non-existent until Welch came along?

yup pretty much. The climate is such that within days of picking the grapes the ONLY safe way to drink it would be alcoholic as there was no way to preserve the grapes as we have now. Even if you make the argument that Jesus turned the water into non-alcoholic "wine" Jesus was NOT there every time they had passover or parties, so that would mean that it would HAVE to be alcoholic wine.
