Psalm 60 also says that God has "shaken the land and torn it open". Another Psalm talks of the foundations of the earth being shaken.

The Psalms are poetry and contain many great teachings but they use imagery at times to accomplish this.
And what about these verses;

Immovable means that it cannot be moved - i.e by something or someone else.
Not that it cannot move at all.

The earth can rotate on its own axis and move, in a circuit, around the sun - that's it. It cannot go anywhere else.
It is not going to wander around the night skies, so that we get too close to/too far away from the sun and get burnt up or freeze. It is not suddenly going to find that it has wandered off, got lost and is in danger of falling down a black hole. And no other force in the whole universe - angels, demons or whatever are going to pick the earth up and put it somewhere else or throw it around. No wind can blow it off course.

Why can't it? Because God has made it that way. God wants it to be where it is so that we - the people he created, lived and died for - can have life.
I don't know any technical details but someone has said that if this planet were a fraction closer to/further away from the sun, life could not be sustained. If the earth rotated a fraction faster we'd fall off. If any things that sustain life on our planet were different, we wouldn't be here.

That is amazing. And it is so because God, our Creator, wants it to be so. None of it is down to luck, chance or whatever; God made it that way. God decided, God created, God established.

The Bible doesn't spell any of this out or give scientific/astronomic details - because it is not a scientific textbook and that is not its purpose. But, I am sure, that is what the authors meant - this is God's wold and it cannot be altered or moved by anything else.

What do you understand by "foundations"?

The foundations of a building are under the building, supporting it. The foundations have to be built on rock or anchored to something.
What is the earth built on, or anchored to?

The underworld, Sheol.
You think the whole of this world is build on the underworld - the place of the dead?
This world was created before anyone had died. God created all things and said it was very good, Genesis 1:31. Genesis does not say anything about the underworld.

1 Chronicles 16 records David singing a Psalm of thanksgiving, so once again it is poetry, full of symbolism. If you want to insist it is literal then your claim is now that the earth is a sentient being and trees have voices.

Worship the Lord in holy array;​
tremble before him, all the earth;​
yea, the world stands firm, never to be moved.​
Let the heavens be glad, and let the earth rejoice,​
and let them say among the nations, “The Lord reigns!”​
Let the sea roar, and all that fills it,​

before the Lord, for he comes to judge the earth.​

That's got nothing to do with what I said.

Nowhere in Genesis 1, or indeed the Bible, does it say that the foundations of this world are the underworld.

Look at the symbolism applesky. From the beginning is construction symbolism. Do you think God used a measuring line to measure the earth before creating it? Do you realize that the cornerstone is God? Do you know what a cornerstone is? Do you think that the morning stars actually sang together? Did God make a garment for the cloud and then swaddled it like a baby? Did He set a door with lock on earth? Think. Learn the beauty of poetic language and the tremendous teachings that they offer.
