As you learned, God didn't say the whole world was flooded.
Right. As you seem to now realize, the flood was not worldwide. If it had been God would have said so.
But He didn't say which land.

Yup, the beginning is when God began to create it. But again, the text doesn't say how long the earth was formless and void before that time.

Here, again, God doesn't say "world" (tevel) but just "erets" (land). And this is why you are continuously confused. "Land" can mean "hereabouts", "my land", "this nation", and so on. But "tevel" means "the whole world." Which is why God said "erets", not "tevel."
Why not just accept it as it is?

Actually, it would. You're struggling to find an excuse to explain why you believe in a world-wide flood when God didn't say so. Reflect again on the description of the sky in the flood story, and why it's described as solid with windows in it.
When you figure out that, you'll be troubled no longer by the words God used for the flood.
