To be honest the thought of appealing to the Jewish law hadn't occurred to me. I thought Christ's scribbles in the sand were far more personal as they went away one by one starting with the oldest. I personally think He was pointing out their own sins.I've also wondered if the Lord may have written where in the Law it is required that that the evidence be in a court (Deuteronomy 19:15-21). This was, at its core, an unlawful mob trying to use the Law to justify its own unlawfulness. The ones who wanted to use the Law to kill a sinner were just as guilty of sin. Thus what is written demonstrates that they are, themselves, sinners.
I'm not saying this as against what you and Claire have already said--only offering an addition to that I've had in my own thoughts on the matter.

He also refused to get into a shouting match and inflame tensions further, so He scribbled in the sand.
But I suppose He could have made reference to Jewish Law.
