Actually, God accepts those who do right, and rejects those who do wrong:

Gen 4:7 “If you do well, will you not be accepted? And if you do not do well, sin lies at the door. And its desire is for you, but you should rule over it.”

Cain was evil. He did not "do well". That's the reason his offering was rejected.

Hello @BurningBush84, the vegetarian/vegan diet, for both man and animal, was how things began. The carnivore diet happened after the Flood, beginning with Noah and his family.

Genesis 1
28 God blessed them; and God said to them, “Be fruitful and multiply, and fill the earth, and subdue it; and rule over the fish of the sea and over the birds of the sky and over every living thing that moves on the earth.”
29 Then God said, “Behold, I have given you every plant yielding seed that is on the surface of all the earth, and every tree which has fruit yielding seed; it shall be food for you;
30 and to every beast of the earth and to every bird of the sky and to every thing that moves on the earth which has life, I have given every green plant for food”; and it was so.
31 God saw all that He had made, and behold, it was very good. And there was evening and there was morning, the sixth day.
Genesis 9
1 God blessed Noah and his sons and said to them, “Be fruitful and multiply, and fill the earth.
2 The fear of you and the terror of you will be on every beast of the earth and on every bird of the sky; with everything that creeps on the ground, and all the fish of the sea, into your hand they are given.
3 Every moving thing that is alive shall be food for you; I give all to you, as I gave the green plant.

The reason God looked on Abel with favor is because the sacrifice of shed blood was symbolic of Messiah to come. Has nothing to do with "meat over plants"

Hebrews 9:22 says, “In fact, the law requires that nearly everything be cleansed with blood, and without the shedding of blood (Jesus blood) there is no forgiveness.”.

Animal has life, but plant has no life. Cain and Abel know that.
Cain is too proud (of his produce) to buy a sheep from Abel for the offering.

Genesis 4:3 And in process of time it came to pass, that Cain brought of the fruit of the ground an offering unto the LORD.
4 And Abel, he also brought of the firstlings of his flock and of the fat thereof. And the LORD had respect unto Abel and to his offering:
5 But unto Cain and to his offering he had not respect. And Cain was very wroth, and his countenance fell.

The correct order, under the Law, was cattle-herd-flock first.

Leviticus 1:2 Speak unto the children of Israel, and say unto them, If any man of you bring an offering unto the LORD, ye shall bring your offering of the cattle, even of the herd, and of the flock.

Followed by that which came from the ground.

Leviticus 2:14 And if thou offer a meat offering of thy firstfruits unto the LORD, thou shalt offer for the meat offering of thy firstfruits green ears of corn dried by the fire, even corn beaten out of full ears.

But that was under the Law, which came centuries later.

Notice it doesn't say God refused to take Cain's offering.

He just took Abel's offering first.

That's how I see it anyway.

The traditional Jewish understanding of that story has nothing to do with dietary preferences. Cain was not good, so his sacrifice was not accepted.

Neither was Abel.
