Got a recipe for you

I just tried this with my breakfast smoothie this morning.

Avocado Egg Salad

4 large hard boiled eggs
2 avocados peeled and pitted
1/2 t salt
Black pepper to taste
1/4 c of mayo or Greek yogurt
1 T lime juice
1 t sugar
1/2 t mustard
Toast

Mash and mix eggs, avacado, salt and pepper together. Add remaining ingredients and stir to mix. Serve on open-faced toast

You can cut this recipe in half. It makes more than you think it would. I added the juice of 1 small lime instead of just 1 tablespoon of lime juice. Used the Greek yogurt instead of mayo and served on whole wheat toast. I also had some leftover pico de gallo and sprinkled that on top. I'm stuffed and I had only 1 piece. Try it! It's good and healthy too!

Can you remind me again of the health benefits of avocado? It seems very popular right now, but I found the taste to be kind of bland. I don't mind it cooked or in other recipes though.

But I figure there has to be a reason more people are eating it... It can't just be for the flavor.

I always thought they tasted like Crisco when I was a kid . But I like guacamole now because it’s flavorful and I like the avocado texture so I’m gonna try this when I get a round tuit;)

It's a good fat and filling. I have always loved avocado. I even put it on sandwiches. I think it has a nutty flavor. I even put it in my smoothies. I do not know the specific (official) health benefits. I'm sure it could be researched.

My mom and sister made this last Monday and it was delicious! Highly recommend. :thumbsup:

Sounds like a nice healthy breakfast. What type smoothies do you make?

My smoothie of the week last week was orange juice, black berries, banana and strawberries.

This morning I had spinach, banana, pineapple, yogurt, avocado with a dash of cranberry juice. Along with the recipe I posted. I try to eat healthy in the morning. It gets your metabolism started and sets the tone for your whole day.
