When Jehovah’s Witnesses observe the Lord’s Evening Meal, only a small fraction of us partake of the bread and wine. Why is that so?

Jesus’ shed blood established “a new covenant” that replaced the covenant between Jehovah God and the ancient nation of Israel. (Hebrews 8:10-13) Those who are in that new covenant partake of the Memorial emblems. It includes, not all Christians, but only “those who have been called” in a special way by God. (Hebrews 9:15; Luke 22:20) These ones will rule in heaven with Christ, and the Bible says that just 144,000 people receive that privilege.—Luke 22:28-30; Revelation 5:9, 10; 14:1, 3.

In contrast to the “little flock” of those called to rule with Christ, the vast majority of us hope to be part of “a great crowd” who will gain everlasting life on earth. (Luke 12:32; Revelation 7:9, 10) While those of us with an earthly hope do not partake of the Memorial emblems, we do join in expressing thanks for the sacrifice that Jesus made in our behalf.—1 John 2:2.​

Yeshua clearly said;

John 6:53 ... Verily, verily, I say unto you, Except you eat the flesh of the Son of man, and drink his blood, you have no life in you.
John 6:54 Whoso eats my flesh, and drinks my blood, has eternal life; and I will raise him up at the last day.​

We eat his flesh and drink his blood symbolically by partaking of the bread and cup at the "Lord's Supper". If anyone fails to partake of those symbols, they do NOT have eternal life. Therefore, millions of Jehovah's Witnesses are being deceived by their leaders/Watchtower into forsaking eternal life.

I know that in some Roman catholic churches only their clergy get wine.
Would you agree that they, along with JWs, are in danger of not receiving eternal life as well?

Is that still a thing? As I understood it Vatican II restored Communion in both kinds to the laity.

Upon looking it up, apparently Vatican II established that it was up to each bishop on whether to offer both kinds to the laity, and in most cases bishops have given blanket authorization for it in their dioceses; as such I suppose there are still cases where bishops may withhold it within their diocese.

Perhaps in some very limited diocese. However, the base intent is completely different from the JW beliefs. The RCC believes that all Catholics have the obligation to celebrate Mass and partake of the Eucharist. The Eucharist may be under the species of bread, wine, or both. Catholics are in no need to partake of both species and the limitation is not really born of beliefs like the JWs hold.

I know that in other churches like Episcopal and Catholic that use real wine, an alcoholic can give a sign to the one administering that he is not to take of the wine; would not jepordize him receiving eternal life.

Correct, the official RCC teaching is that one only needs to partake of one species. This definitely helps alcoholics, celiacs, and others that have reasons to only receive the body or blood. Normally one does not need to make any sort of sign, one just goes to the appropriate place to partake of the body or blood. Most parishes in the USA make it quite easy to only partake of one without feeling like you are being singles out. :)

In Eastern Orthodoxy you have no choice...you get both ALWAYS.

In short...Jesus did not mix the two as far as we know so why should they must be mixed? Must one have to partake of both to be complete? Eastern Orthodox mix the two together and have a good Tradition on why but both methods are valid, and this is not an issue keeping the churches divided. As I said, many Eastern Catholic churches perform the sacrament just as their EO brothers.

unless you are not Orthodox, then, as a guest -- you only get bread, right?

Only Orthodox can partake. Guests can have "artos", which is non-consecrated bread.

Because He gave out BOTH and said to partake of BOTH. I mean at Shabbat and/or Passover, there was not JUST bread or JUST wine...there are always BOTH.
