The Lone Gunmen.
I would have liked to see it continue too. There was another show, can't remember the name, about an investigator who had some kind of incurable disease that was killing him, but some group provided him a temporary cure as long as he investigated the strange cases he was assigned.

I wish I could say King of the Hill, since it's one of my favorite TV shows, but the show's writing went downhill dramatically after about 2005 or so. It was a pity.

While I agree that the writing wasn't as consistently as good in the later seasons, some of the episodes in the 11th, 12th, and 13th seasons are favorites of mine (The Peggy Horror Picture Show, Lost in MySpace, Death Picks Cotton, just to name a few). I do think it held its quality much better than The Simpsons.

Detroit 187, Lie to Me and Human Target for recent shows.
Back in th early 90s there was a show called Homefront that dealt with guys returning from WWII that was very good. Naturally it didn't last long.

Promised Land -- was about a family man, Russell Greene, who gives up his home, gets a travel trailer, and hits the road with his wife, two children, nephew, and mother to travel the country and help people, with wife Claire homeschooling the three kids. During the third (and last) season, an accident with the travel trailer forces the Greene family to pull over and move to a "fixer-upper" home in a somewhat rougher end of town, and they concentrate on helping people in their new home community. It was supposed to be a spin-off of Touched by an Angel.

On Our Own only lasted one season (1994-95). It was a sitcom about orphaned siblings trying to stay together after the recent death of both parents, ranging in age from infant to 21 years of age. The first few episodes showed the eldest brother dawning drag to disguise as a middle-aged aunt for the social workers to keep the siblings from splitting up.

There were a few others, of course, but I can't think of them right now.
