    Ok, first are you seeing the thumbnail images? You can increase the size of those, by clicking on View, Thumbnail Size, then pick medium or large. Then you'll be able to see them better, and you'll have several in view at once. Once you click on a picture, you should see a large version of it...

    Maybe you could freeze it with water in an icecube tray. Pop out the ice cubes you need for cooking and add to whatever you're making. I don't know about the botulism thing, though. But I know that it works well with fresh herbs that you want to keep for a while.
