People talk about guardian angels, and angels are mentioned in the holy scriptures so I wonder do we really have guardian angels and if so how many?

I have no clue. It's rare to see them--I've never seen one that I knew was an angel initially. I may very well have met an angel who looked like an ordinary human being.
