The news of the past week has been:
'She's popular with Democrats and the grassroots are volunteering and throwing money at her.'
'Donald Trump and his allies question her blackness.'

Even if she hadn't been tied up choosing the next Vice President of the United States, why would she step in the way of that?

They have to delay it as much as possible. Either to stack the audience with so-called reporters who will be favorable and ask pre-approved questions. Or, wait until the media frenzy and excitement she’s experiencing gets high enough that a foreseen horrible press conference will hurt her, but not as much as one now would.

The Sun does not have that capability. VP Harris will likely sit for several interview before Election Day, as it is in her best interest to get her message out to anyone who doesn't know and might vote for her. I don't know why an interview is such a big deal. I haven't done one in years.
