Because even though it was considered strange in those days, we now know that consuming fatty tissues leads to high cholesterol and bad health. And as far as the sacrifices go, look at them this way: Be thankful that you don't have to go through ALL those rituals just to be right before God. Jesus takes the place of all those sacrifices. (Unfortunately, I feel guilty now because I realize that every little sin had to be covered by a sacrifice. Which means that every little sin I commit is just places Jesus right back up on that cross.)
