Why follow some of the OT laws

Some of the 613 laws (Judaism 101: A List of the 613 Mitzvot (Commandments)) deal with how to treat Gentiles (#53-58), some deal with slavery (#190-202), some deal with the priestly service (#373-401) and some dealt with the Temple and its services (#426-458). You will note that some of the 613 laws have been incorporated into our legal system (3270 for example).

Those that deal with the theocracy ended when the people of Israel chose to have a king. Those that dealth with the Temple ended when it was destroyed. And we no longer have priests so those rules don't apply either. And since most Christans are Gentiles, those rules no longer apply.
