Well uhm I'm looking at my Bible right now and it gives summaries and other facts about each book. Here's what I've found:

Genesis is written by Moses around 1450 BC.
Exodus was also written by Moses around the same time as Genesis.
Leviticus had the same author and was written around 1445-1444 BC.
Numbers was written by Moses around 1450-1410 BC.
Deuteronomy was written by Moses with the final summary probably by Joshua around 1407 or 1406 BC.

The dates depend on a few things.
The Hebrew people preserved their history through oral traditions which were written down some time following the events.

A better question involves when the event occurred and when the books of the old testament were compiled as a whole, which seems to begin sometime around the babylonian exile.

The OT canon was closed at the Council of Jamnia around 90 AD.
