Death Knights are a type of warrior that uses dark magic to augment their fighting skills. They are a common type in most fantasy RPGs, though often by different names (Shadow Knights in Everquest) You will find them as Death Knights in D&D and World of Warcraft. You can probably find them other places as well but those are the only two I am aware of.

You mean as the actual name of the character or do you mean would it be sinful to play that class of character? Either way, I don't think so.

They are also known as Dark Knights in the Final Fantasy universe.

I've always known Death Knights by the DnD and Heroes of Might and Magic definition. Simply put, they're a sentient, higher-level Undead warrior, usually in command of armies of lesser and unthinking Undead, like skeletons, zombies, and wraiths.

I see no reason why it would be sinful. It's a fantasy world that doesn't exist. As long as whatever it is you're playing or writing doesn't consume you, you should be good to go.

Long ago, when the dragonlance books were still being written, there was a character named Lord Soth who was a death knight.

Best I remember is he was an undead knight and generally not a guy you would want to sell girl scout cookies to.

I have a book about him called Knight of the Black Rose.
