Definitely Phish. I'm not a metal fan, really. What I've heard of Maiden is fine, but it's still not my genre. Phish, on the other hand, is awesome. I only have A Live One, but it's great, and I can't wait to get more of their stuff. Jam bands rock :)

Iron Maiden rules! Got a big Iron Maiden Killers flag hangin in my room. Seen them live once with Dio and Motorhead... Bruce Dickinson gets mad and stops signing it thought that was dumb. But still a great band live and studio wise.
Dio Rocks! "Holy Diver" and "Rainbow in the Dark" are two of my favorite metal songs.

Hmm...tough vote, but I will have to choose Maiden because of their development of metal and the bands that they influenced.
In the same way, Phish pretty much invented the jamband scene.

Trey Anastasio is IMO one of the best guitarists of all time. Better than Jerry Garcia, better than Jimmy Page. Listen to him a lot you will know what I mean.

I don't know much about the genre, but wasn't the Grateful Dead considered a jamband?

Yes, he is an extremely good guitarist -- an intellectual guitarist.
