Snacks with Vegetables

Apparently pregnant women should be getting five serves of vegetables a day. Half a cup is considered one serve. I'm a bot concerned, because I'm not getting anywhere near that amount. With Isabel I was, because I usually had one salad meal, and one cooked vegetable meal a day, and together that was about five serves.

However, this time around I am completely off salad. I was sick after eating a salad roll, and now the thought of anything salady (apart from tomatoes) makes me want to be sick. So I'm only really having one vegetable based meal a day.

Can anyone offer suggestions of vegetable based snacks (that don't include salad items)? I'm thinking of making my own vegetable spring rolls, similar suggestions would be great. Any help would be greatly appreciated.

Make veggie stir fry.... I don't know if you consider that a snack, but we like it. ;)

Baby carrots that you dip in peanut butter... yum

Make pizza at home and make it veggie pizza with green and red peppers, onions, mushrooms and anything else you can sneak in .... I guess thats not a snack either.... if you are at home like me though it could be. ;)

I usually have stir-fry as a meal, and I load it with vegetables, yum. That's probably one of my main vegetable meals.

Not sure about the carrots, I've gone off raw carrot (because of the salad incident *yuck*)

Your pizza suggestion reminded me of something we made at playgroup for morning tea, which was using English muffins as pizza bases, and making mini-pizzas from that. I think I will do that, it's a great snack.

You can also have fruit, it's 5 portions of fruit and veg a day so make your self a large bowl of fruit salad (it'll keep in the fridge for 3 or 4 days, don't add bananas, if you like them add them to your portion) and have a small bowl of that each day.

You can also make yourself a plate of crudites, I use carrots, cucumber, celery and pepper, and get some dip for them, it's very nice.

Athene, the booklet I got from the midwife at the hospital says:

Vegetables-5 Serves
Fruit-4 serves (this is fine for me)

Is this overkill, or what? If you only have to have five servings of fruit and veg, I want it too :) It sounds a bit more realistic.

I'm completely off raw vegetables of any kind, otherwise I would take up your suggestion. I love hoummos, and they would normally taste yummy dipped in that. However, at the moment the thought of eating them makes me feel horrid. Hopefully it will pass soon (I was like this with sushi when I was pregnant with Isabel, and haven't been able to eat it since).

My booklet said 5 portions of fruit and veg per day.
What I'm doing is having a side salad with my lunch, chopping up a banana and an apple and adding it to my breakfast cereal, fruit for desert, I think fresh juice counts as one portion but if you drink 5 glasses then it's still classed as one portion. I also have steamed veg with my evening meal most days, retains more nutrients if they're steamed then boiled you see. And fresh fruit for snacks, and crudites if I'm feeling adventurous.

How about a cheese dip with veggies cooked in (spinach, artichoke, peppers, tomatoes) or an avocado dip? Or an omelet or quiche with lots of veggies in it? It's also easy to add veggies to soup recipes. Or you can add a little veggie boost to other foods by grinding up broccoli or carrots and adding them to meatballs, pasta sauce, etc.

(I've been trying to figure out how to make vegetables appealing to my 11 mo. old, so that's where a lot of my ideas are from!)

I couldn't do it with my daughter and I can't with this one....I don't think there is any way to eat as much as they tell you to!!!
I eat 3 healthy meals, and try to snack on carrots, fruits, cheeses, etc. throughout the day. I also cheat and eat cake and ice cream and such. I had this same diet with Natalie and she came out perfectly healthy....
Just my opinion. Make sure you are taking that prenatal though!

I don't eat many veggies either, especially for snacks because I'm always hungry shortly afterwards, but I always make a veggie for dinner, corn, green beans, brocolli, something. I'm a major fruit eater though, I eat strawberry yogurt, or blueberry bagels for snacks and a banana or apple during the day and a grapefruit before bed. I think the grapefruit has helped keep the colds away.
