You could always do steamed or roasted vegetables...broccoli, cauliflower, zucchini, squash, peppers, asparagus, snow peas, etc. We like ours sort of stir fry style...cooked in a little bit of oil (olive or canola) and some soy sauce (maybe a dash of worchestshire, and a few drops of hot sauce). Don't forget herbs and spices...different seasoning can make the same old vegetable taste brand new.

And there's always salad...my hubby likes his salads dressed with olive oil vinagrette...I don't like dressing (at least none of the low carb dressings), so I use salsa on my salads (with a little fat free cottage cheese on the side). :yum: Good stuff.

Good luck to your wife on her diet. :)

Hey, how's the low carb diet going?

Have you tried making mock potato salad? You make it the same as potato salad but use cauliflower. Good stuff!

You can also us cauliflower in other ways too. Clean a head of fresh cauliflower and put it through the shredder (yes, the shredder) of your food processor. Saute it in a bit of butter and olive oil. I season it differently every time I make it. You can use some garlic powder, chicken bouillion, soy sauce, etc.

Squash and zucchini is great grilled! Take a look over in the Recipe forum. I've posted several low carb recipes there including a recipe for squash crusted with parmesan cheese - yummy!
