My mom was helping a friend of hers do some cooking. The family just decided to go Paleo because of struggles with various autoimmune disorders in the family.
The woman gave my mom boxes of food they can't use.
So we got some rice paper. I guess my family is a traditional plain Jane eating kinda family.
What kind of recipes have you used rice paper with? Any suggestions?

Oh my goodness. You're a blast from the past! I thought you'd left the forum because I haven't seen you this year, but it's lovely that you're back.

I don't really have a recipe, but I love making fruit roll ups with rice paper. We just slice up strawberries, mangos, bananas, and pineapple, and add them to blueberries and raspberries in a bowl; then stir in a little sugar in the raw, honey, agave nectar, or a smidgen of some other sweetener; and pop it into a sealable container to go into the refrigerator for a couple of hours. The fruits marinate in their juices beautifully. Then we put them inside the rice paper. You can drizzle on some balsamic vinegar and add in some nuts, chocolate peels, or cheese if you'd like, or just let the fruit be the star. It's really pretty because the fruit looks like a rainbow captured inside the paper. If you have Nutella or dulce de leche you can use it as a dipping sauce of sorts.

I'll also just put some avocado, cucumber and tomato slices, and a bit of olive oil in the rice paper for a light lunch. It's definitely not a traditional use of them, but enjoyable to me nevertheless. You can probably find more ideas on YouTube, as well as on Pinterest.

I kinda had a "duh" moment after I posted this. I have Pinterest as an app on my phone but it just didn't cross my mind to check it.
Thanks for the suggestions. I never once thought of fruit.
I tried a recipe for my parents and my little sister. We cooked some chicken, garlic, rice vermicelli and honey garlic sauce and wrapped it with lettuce in rice paper. Then we dipped it in sweet and sour sauce. It tasted pretty good.
Only trouble was that later in the day I felt sick to my stomach. No one else did. Plus the texture of rice paper reminds me of ...I hate to even say it...kinda like intestines...like the stuff on sausages?
Did we not soak it long enough?
Kind of turned me off rice paper LOL

I've never tried rice paper but Idk that I ever want to try it now! It reminded you of intestines? I hate that casing thing on sausages & hot dogs. It's such a weird consistency. Everything you put inside the rice paper sounds really yummy.
Honey garlic + chicken. Drools. That's a really good combination.

I will pm you a bunch of recipes. There are some yummy ones. The trick with rice paper is to cut them in half and use more filling. Wrap them small and tight. They are kind of a wierd texture in your mouth, I do have to admit. I think it takes a bit of getting used too.
Don't give up trying until you try one of my recipes. :
