Malachi 3:
2 I have loved you, says the Lord.
Yet you say, In what way have You loved us?
Was not Esau Jacob’s brother?
Says the Lord.
Yet Jacob I have loved;
3 But Esau I have hated,
And laid waste his mountains and his heritage
For the jackals of the wilderness.

The reason this is hard for some to comprehend is because their knowledge is limited
to the narrative of Genesis. Just as the nation of Israel is often addressed as Jacob,
the nation of Edom is often referred to by their patriarch Esau.
The reason God states that He hates Esau is because they celebrated the fall of Jerusalem
to the Chaldeans, and the destruction of the Lord's sanctuary.

Psalm 137:7 Remember, O Lord, the children of Edom on the day of Jerusalem;
who said, Raze it, Raze it, even to the foundation thereof.

This scripture should not be interpreted to mean that God hated the
person of Esau. Selling his birthright was a truly bad decision, but
that did not earn him any hatred from The Father.
And yet, he is described as a profane person for his actions.

Hebrews 12:
16 lest there be any fornicator or profane person like Esau,
who for one morsel of food sold his birthright.
17 For you know that afterward, when he wanted to inherit
the blessing, he was rejected, for he found no place for repentance,
though he sought it diligently with tears.

This should be understood as the accountability found in
the Lord's Righteous Judgment.
Let us avoid this kind of tearful, heartbreak by diligently
pursuing our inheritance in Christ.

The Lord is King and Judge of Nations.
Psalm 43:1 Vindicate me, O God,
And plead my cause against an ungodly nation;
Oh, deliver me from the deceitful and unjust man!

Does that mean that the Lord is not able to bring
deliverance to His Father's people: the afflicted, the oppressed, the orphan, the widow; out of every nation?
God is Able.

Jeremiah 12:
14
Thus says the Lord: Against all My evil neighbors who touch the inheritance which I have caused My people Israel to inherit—behold, I will pluck them out of their land and pluck out the house of Judah from among them.
15 Then it shall be, after I have plucked them out, that I will return and have compassion on them and bring them back, everyone to his heritage and everyone to his land.
16 And it shall be, if they will learn carefully the ways of My people, to swear by My name, ‘As the Lord lives,’ as they taught My people to swear by Baal, then they shall be established in the midst of My people.
17 But if they do not obey, I will utterly pluck up and destroy that nation,” says the Lord.

The Lord's hatred towards Edom is precisely
equivalent to the hatred they have shown towards
the Lord's heritage. This is sound Biblical principles.

I think the key verse here is this:

Genesis 25:28 NAS20
“Now Isaac loved Esau because he had a taste for game; but Rebekah loved Jacob.”

The principle here is that Isaac loved Esau because of something Esau could do for Isaac, but Rebekah loved Jacob despite the fact that Jacob wasn't said to have don't anything for anyone. Rather, the only reason that Rebekah loved Jacob was based on this verse:

Genesis 25:23 NAS20
“And the LORD said to her,
“Two nations are in your womb;
And two peoples will be separated from your body;
And one people will be stronger than the other;
And the older will serve the younger.””

This means, that Rebekah loved Jacob because of what the LORD promised to Rebekah - that Jacob would be served by Esau because Esau was "stronger" than Jacob.

So it is by grace that it is said, "Jacob I loved and Esau I hated."

Your recounting of events involving Jacob and Esau
was accurate and insightful.
The scripture that Paul quotes in Romans is actually
addressing nations. As I am sure you are familiar,
the prophets often address the nation of Israel as
'Jacob'. In the same way, Malachi addresses Edom
by the name of their patriarch 'Esau'.
Please read the OP, as I explained this in detail.
Your analysis is common in regards to "Esau have I hated",
but has this inaccuracy. Be wary of the 'common' or
widely accepted, and seek the knowledge of the holy.
Proverbs 9:10 The fear of the Lord is the beginning of wisdom: and the knowledge of the holy is understanding.
