obviously we aren't going to remember each adn every time we've sinned in our past. i would say confess specifically the one syou remember. God knows everything you've done in the past too and He also knows your heart. And that you want to confess for what you've done. i would say do your best to remember what you can and say that if you've forgotten any other sins to please forgive you of those as well. :)

In an adult conversion to Orthodoxy, we confess all our sins that we have committed. We are taught that to purposefully omit anything is very grave, and we are to omit nothing major that we can remember. We are also taught that we are human, and we forget things, God does not hold that against us, for he knows our hearts. I have gone to confession and honestly forgotten a sin that I needed and planned to confess, but I have not worried about that for God forgives and absolves me of all sin.

It is also good to enumerate your sins rather than say a simple, 'sinners prayer' for this reminds one, on a personal level, of those transgressions that have separated you from God.
