Who were the 'we'?

Believers; they believed in the salvation of Jesus. However, some continued to sin frequently and deliberately, willful and persistent sinning.

after receiving the knowledge of the truth, there no longer remains a sacrifice for sins,
Christ's sacrifice is final and complete—for those who know it, there is no other way of salvation.

27 but a fearful expectation of judgment, and a fury of fire that will consume the adversaries.
This was a warning of eternal judgment for believers who persisted in deliberate sin by trampling on Jesus.

28 Anyone who has set aside the law of Moses dies without mercy on the evidence of two or three witnesses. 29 How much worse punishment, do you think, will be deserved by the one who has trampled underfoot the Son of God, and has profaned the blood of the covenant by which he was sanctified, and has outraged the Spirit of grace? 30 For we know him who said, “Vengeance is mine; I will repay.” And again, “The Lord will judge his people.” 31 It is a fearful thing to fall into the hands of the living God.
The Lord will judge these so-called believers.

Was this an example of unforgivable sin?

Only if they refuse to repent of their deliberate sins.

John spoke of many leaving after being in fellowship.

1 John 2

This is where I interrupt. The language in "fearful expectation of judgement..." follows immediately behind, "there no longer remains a sacrifice for sins". The tone of the whole, to me, is that of what it feels like to the one purposely sinning. (And, frankly, I don't believe there is such a thing as a non-purposeful sin, regardless of whether the sinner is conscious that he is sinning). His CONFIDENCE in salvation is shaken, as it also says in several other places and several ways in other scriptures. In other words, this person no longer sees the sacrifice as effective for him and he has lost his confidence in it.

Now, I'm not saying THIS IS THE INTERPRETATION AND CORRECT USE. I only mean to present it as an alternative. But yes, it also feeds into the use of further verses (and earlier) in Hebrews.

And be fooled/ tricked/ deceived by almost anyone as well.

The audience was Wheat and Tares - not all were believers.

So the audience is a mix of the saved and the unsaved.

I'd put it as a mix of the saved and those who thought they were saved.

Can't know they have eternal salvation.
I can know about the assurance of my own salvation. I cannot know if others are. That's between them and God. They also can know their assurance of their salvation, just like I.
