I need to try to find some on sale.

I don’t know how many of you like oysters but this looks yummy to me.


Roasted Oysters with Garlic-Parsley Butter​


Directions​

  1. Make the garlic-parsley butter: Puree the butter, parsley, shallots, lemon zest, roasted garlic and a little salt and pepper in a food processor until smooth.
  2. Preheat the oven to 375 degrees F. Open the oysters with an oyster knife. Divide the oysters among small baking dishes lined with baguette slices. Place a heaping teaspoon of garlic-parsley butter on each oyster. Roast the oysters until the butter is melted, 8 to 10 minutes. Serve immediately.

They are seldom available on the half-shell but jars were ubiquitous through the holiday season.
I usually get them at a certain shop but they have been nowhere to be seen this year in my area.
