hahaha, that is hard. Even if you don'tknow someone, you can watch someone and see if they have a specific need. For instance if they are in a wheel chair, the obvious would be to pray for comfort or healing. If they have no visual concerns that you can see pray for their safety and welfare, and for their family if they have one. Find out their names and ages of the kids and pray for them to have great days, etc...

Just some suggestions, hope they help in someway.

God knows each and every persons heart. We have prayer requests that just ask for prayer because GOD KNOWS what the person stands i need of.
You dont even have to know the persons name to pray for them.
Again.. God Knows all..

We ask for prayers for the entire congregation at church, if they are specific then I ask for that specific, but normally I ask God to watch over the congregation and that he knows what they stand in need of and to be there with them and guide them.
I wouldnt (in my opinion) limit that prayer to one person in your congregtion, but for the entire congregation, because each and every person there needs prayer for guidance in everyday situations.
Again God knows....

I would ask the person "Is there anything specific I can pray about for you?" If they tell you something, then your problem is solved. If not, you can always pray for them to be healthy, to be kept safe, to grow in their relationship with God, to grow in their relationships with other people, to be successful in all that they do, to stay in God's will for them, and to be blessed. You can also pray all those things for their loved ones (again, you can just use the general term "loved ones" if you don't know who those would be). And if the Spirit leads you to pray for something specific, go with it
