The Bible does not tell us explicitly. My guess is that God told Adam and Eve after the fall, and the knowledge was passed down to those who cared about it.

At this point, It was not recorded what was clean or unclean, but Abel knew that firstborns from his flock were acceptable sacrifices. I'd assume that the LORD had communicated the basic definition of clean animals to mankind. The first mention of "clean" is in Genesis 7:4 Abel also brought an offering—fat portions from some of the firstborn of his flock. The LORD looked with favor on Abel and his offering,
