I would say rabbit while being stringier than chicken in texture is also gamier than chicken in taste. It is probably closer to goat/lamb.

I was on Pine Ridge Reservation this summer helping with a VBS, and we were having a potluck meal with the kids and their parents one night. We started talking about differences between their hot dogs and the ones we are used to here. Their hot dogs are dyed red! Anyway, we started talking about things to eat and the kids talked about liking dog. We went, "Eww, we don't eat dogs!" and the kids said, "Why not?" It took me a while before I figured out that they were talking about prairie dogs, not house pets.

I lived in Colorado several years ago. I remember some restaurants served Rocky Mountain Oysters...I could never bring myself to try them.
