how do jews say happy easter?

Well, it's not something we normally say. Jews celebrate Passover (פֶּסַח Pesach) rather than Easter. I've heard people call Easter by the Aramaic/Greek word פַּסְחָא / πάσχα (Pascha).

So, I would assume:

חַג פַּסְחָא שָׁמֵחַ
Chag Pascha Sameach

I've never heard that before, though.

Of course we do. But we don't say "Happy Easter."
We say "Happy Passover."
