Well, it's not something we normally say. ;) Jews celebrate Passover (פֶּסַח Pesach) rather than Easter. I've heard people call Easter by the Aramaic/Greek word פַּסְחָא / πάσχα (Pascha).

So, I would assume:

חַג פַּסְחָא שָׁמֵחַ
Chag Pascha Sameach

I've never heard that before, though. :)

We say "Happy Passover."
Your question was about how to say "Happy Easter."

חַג פֶּסַח שָׂמֵחַ = Happy Passover
