Do you sample caterers?

Do people usually sample caterers before picking one? I'd like to know what they are like before booking but I dont know whats normal. There arent a lot of options around here and the ones that are more popular are already booked so I dont have a lot of confidence in the ones that are left. I have three options left right now. So, how do you pick a caterer?

My old roommate and her husband sampled a couple of caterers, or maybe it was just different meal options from one. I think all they did was set up an appointment to come in and they said the number of people that were coming and what dishes they wanted to try.
