In Isaiah 65 we learn about God's new heavens and new earth.

"The days of man shall be as the days of a tree (1000)"

Adam lived to be close to 1000
Christ shall reign for 1000 years

"He that is 100 will still be a child, he that dies at 100 will be thought be accursed."

Here, once again we see a world starting with 1000 years and drifting again into an age where humanity will at best live to be 100. Here we see they will indeed die, and to be accursed they will indeed sin.

One day with God is 1000 years on Earth
Lest they eat of the tree of life and live forever
Adam and his descendants lived to be close to 1000

The fallacy lies in the numbers, and also, your interpretation of Isaiah 65.

1. A day with God can be anything, even an instant. A day with God is like a thousand years and a thousand years like a day (2 Peter 3:8) isn't supposed to be interpreted as a fact.

2. Isaiah 65 only implies labor. On the other hand, Revelation says there will be no more curse, indicating that there will no death and sin associated with this labor.

Update:

Notice that it says the labor will not be in vain. In Ecclesiastes, the temporal labor is identified as vanity, but this new labor is not identified as vanity.

Furthermore, if there will still be sin and death, then why should we follow God?

1 Cor. 15:17 and if Christ has not been raised, your faith is worthless; you are still in your sins.
