I've noticed that we've been talking food a lot lately - but no organized place for recipes (they are scattered throughout the various threads).

Personally, I love food (the food network is just about my favorite tv to watch), love cooking, love sharing meals. The kitchen is truly the heart of the home.:hug::hug: I figure I can't be the only one who feels this way.

So, I thought a dedicated thread for recipe sharing would be a good idea.:idea:

Chicken, black bean and corn enchiladas

Boneless chicken breast (this is where I stretch, use 2-4 depending on the number of people).
1 can black beans (I use the southwest flavored with cumin)
1 can chopped tomatoes (Mexican style)
1 cup (or so) frozen corn
1 med sweet yellow onion - sliced
1-2 cloves garlic - minced
grated cheese
flour tortillas
salsa of preference

Meat seasoning
2-3 Tablespoons SW seasoning (I love Emeril's Southwest Essence)
1 teaspoon ground cumin
1 teaspoon red pepper flakes
1-2 grinds fresh ground black pepper
1 teaspoon oregano

Slice the chicken breasts into strips and toss with the seasoning. Saute in a little olive oil until 3/4 cooked. Set aside in bowl. Add onions and garlic to same pan - cook until softened, add corn, beans and tomatoes along with adding the chicken back to the pan. Heat through.

Spoon 1-2 spoonfuls into tortilla shells, add ~1 spoon cheese then roll up and place in baking pan. I pour a little salsa over the top of the enchiladas before cooking - cover with foil and bake @ 350 for ~20 minutes. Remove foil, sprinkle with some extra cheese and bake an additional 5 minutes until cheese melted.

Serve with salsa, sour cream and chopped green onions.

I've also done this leaving the breasts whole, cook the same - but add the breasts back to the vegetables and let finish cooking covered on the stove top. Then I serve over rice. MMMM MMMM

Taco Salad

1lb hamburger
1 pkg taco seasoning
1 can black beans
1 small can sliced jalapeno peppers
1 small can sliced black olives
1 btl Catalina salad dressing
1 small head lettuce chopped
cherry tomatoes
Taco seasoned shredded cheese
1 bag Frito's corn chips

Cook hamburger until thoughly done. Drain well. (I put it in a colander and run hot water over it to get rid of the most grease). Drain and rinse black beans, add to skillet with hamburger and mix in taco seasoning. let cook for a few more seconds. Remove meat mixture and let cool in fridge for at least 2 hours. When cool add the rest of the ingredients. Mix well and enjoy.
Note: if you plan to take this to a pot luck or picnic where it will set a while before serving, wait to add the corn chips till you get ready to eat it or they will get soggy.

1 can condensed milk
1 can cherry pie filling
1 cup chopped nuts (optional)
1 9 oz. Cool Whip

Mix first four ingredients and then fold in Cool Whip.
Freeze overnight.
Move to refrigerator before serving.
It makes a lasagne casserole dish worth of dessert.

Had not made this for a long time but recently made it for New Year's celebration with my parents. Since I am not a fan of nuts in most things I made a substitution. I had left over coconut from other holiday cooking. So I used up what I had left which was at least a cup’s worth I believe. I only had cans of chunk pineapple on hand so took a knife and cut them up smaller to be more like crushed pineapple.

Roll in chex.
Allow to dry 15-20 minutes
Place chicken, skin-side down, in a shallow baking dish
Bake 30 minutes at 400
Turn and bake 20 minutes more.

My variation:
I cut chicken into 3 or 4 inch strips.
Perfect for an appetizer or brunch.
I also put it in the refrigerator overnight.
That is what I HAVE to make for all family gatherings.

Modified from Creamy Fried Chicken casserole in Chex cookbook.

Hi everyone! Tumbleweed and I are starting this new thread. We're going to offer and simple, quick meal with a yummy dessert to go with it. Any suggestions are very welcome, so please go ahead and post them here.

Once or twice a week, we'll try for more healthy meal suggestions.

Slow Cooker Manly Stew

"This stew is hearty and makes a great brown gravy. It is my family's favorite! Serve over garlic mash potatoes or egg noodles. We like to spice the potatoes up with a little hot sauce."

1 (10.75 ounce) can
condensed cream of
mushroom soup
1 (10.75 ounce) can
condensed Cheddar cheese
soup
1 (1.25 ounce) package beef
with onion soup mix
3 pounds beef stew meat

1.Pour the cream of mushroom soup, cheese soup and onion soup mix into a slow cooker, and mix well. Add beef, cover and cook on Low for 8 hours, or on High for 4 to 5 hours

22 OREO Chocolate Sandwich Cookies, finely crushed (about 2 cups crumbs)

3 Tbsp. butter or margarine, melted

1 qt. (4 cups) coffee ice cream, softened

1 cup fudge ice cream topping

MIX cookie crumbs and butter until well blended. Press firmly onto bottom and up side of 9-inch pie plate.

SPREAD ice cream into crust; top with fudge topping.

FREEZE at least 6 hours or until firm. Store leftover pie in freezer.

1 pound ground beef
1/2 (25 ounce) package frozen
cheese ravioli
1 (14 ounce) jar spaghetti
sauce
1 (14.5 ounce) can diced
tomatoes, drained
1 cup shredded mozzarella
cheese
1 cup shredded Monterey Jack
cheese
1 tablespoon grated Parmesan
cheese

1.Preheat the oven to 450 degrees F (230 degrees C).2.Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until no longer pink. Drain grease, then stir in the spaghetti sauce and tomatoes.3.Spread 1/3 of the sauce in the bottom of an 11x7 inch baking dish. Arrange 1/2 of the ravioli over the sauce.
