After a grueling two weeks of work, with 11 and 12 hour days, it's a day off starting a long weekend. After sleeping in until I couldn't sleep anymore, though still being tired, I woke...
And then it's an opportunity to actually have a hot meal with real food.
This was my mid-morning - Let's see, what's in the refrigerator? 1 Potato, 1 roma tomato, 1 small zucchini, eggs, cheese....
Start with a pan at about 360, add a bit of extra virgin olive oil, add minced garlic... consider. Add some fresh grated romano cheese and a bit of milk. Let simmer. Go over to the counter and cube potatoes and tomatoes. Slice the zucchini lengthwise into short rectangular peices. Add a bit of tarragon to the simmering mixture. Consider. Add some turkey broth starter and some water to start making a seasoned turkey gravy. Add a little salt. Add the vegetables. Cover and cook until the vegetables soften to only firm. Breathe in the smell of herbs and gravy. Start a second pan greased with butter with the tiniest bit of tarragon and fry a couple of eggs in it.
Serve the vegetables with gravy onto a plate, top with the eggs and grate fresh romano over them. Excellent!
