I am pretty much vegan. there is a new universe of vegan cuisine tp be discovered.
That looks great. How did the family like it?
I liked it. So did my husband. I thought the pita bread went great with it. It’s very satisfying.

I found this as I am considering a transition to Vegan for a month, to see how it impacts my weight, energy levels and overall health. I am well versed in the use of supplements, so I am not too concerned about a vitamin deficiency.
I have a few friends who are vegan, and they do not suffer from weight issues.
I often fasted during lent, and found that it actually did help my overall being and constitution Which brought up the idea that I use to be vegetarian, and while vegan will be more of a radical move, I could at least stick with vegetarianism IF I want to get back to some more healthy eating habits.

One of my friends who is Islamic was telling me that by the end of Ramadan, he feels healthier after all of the fasting restrictions. While I personally think that the Ramadan fast is too extreme, we are reminded that different habits work for different people. I certainly felt better during the Lenten fasts. That much is certain. I have high hopes for the Vegan move. I have stocked up on some items which will help (vegan breads, almond milk etc) I will make a trip out for more fresh fruits and veggies tomorrow.
