Why are Catholics so exclusive about communion?

Recently I attended a Baccalaureate Mass, and I couldn't help but feel generally the awkward vibe that tends to arise whenever communion comes around, especially when the priest must explain that are not Catholic can come foward and receive a blessing, but may not otherwise partake in the reception of Holy Communion.

I have never understood why this is a sensitive issue for anyone. Not a member, no Eucharist. It is really that simple.

It's always seemed like an entitlement issue to me, "I meet my standards for calling myself a Christian, therefore I should be able to take communion wherever and whenever I want". Which may be more of an issue here in the US than elsewhere.

It completely ignores that there's an objective way of doing things (the Catholic way) and that includes an understanding of what the Eucharist is and how one should approach it.

I remember my first Mass was on Ash Wednesday. ( I was in RCIA the next day.) anyway, this Methodist lady was there and she asked me to go ahead so I could take Communion. I said no because I was not Carholic yet. She looked truly shocked. Stated she was Methodist and was taking communion. I did not say anything but she acted like it upset her that I would not go up to receive communion.

to be fair
a lot of denominations have open communion, so the concept of closed communion might be something they never dealt with before among their own church or the churches of their friends

That could be true, though it seems like it's well-explained why Catholics have closed communion whenever it comes up, so in theory it should soften whatever surprise they might feel. Maybe not always, but most of the time.
