I think your theory is very weak. First of all, in the short time that we've been on earth, no new stars have formed because even if they are still forming, as scientists claim, then they take hundreds of thousands of years to do so. Secondly, even if stars are still forming today, then it's by a natural process of formation that God created.
In the same way, God created mankind with the ability to reproduce. That doesn't mean God is still creating man today. God's work is done, but his creation is a living thing that continues to produce more people (and possibly stars), as well as trees and birds and fish.
His creation is alive. That's what we're witnessing; the life of creation, not creation itself.
